Pasta
au gratin
( for 4 persons )
In a pan, let’s brown for 2/3
minutes a sliced shallot, add 80 gr of crumbled
sausage and 150 gr of minced meat. Then add 4-5
juniper berries and one laurel leaf. Let’s wet with
a small glass of sherry. Add 400 gr of tomatoes pulp
and a little bit of sugar, salt, pepper.
Let it cook for about 20 minutes.
Prepare now a rather fluid
béchamel sauce ( 2 dl of milk, 15 gr of butter, 15
gr of flour, salt, nutmeg).
Let abundant salted water
boil and cook about 350 gr of any kind of short
pasta.
Drain it before being completely
cooked, add the neat sauce already prepared, put it
in a heat-resistant pan, add the béchamel sauce and
grated parmesan.
Put in a warm oven for about 10
minutes.
