marvellous month, due to the “birth” of the new extra-virgin
olive oil and also for the use of the olives themselves.
Here
is a very simple but excellent condiment for pasta, which can, or
better must, be prepared in advance ( at least three/ four days ).
Stone
about one kilo of black olives, cut them in little pieces and put in
a glass pot. Now add some broken-up leaves of laurel, wide fennel,
chinnamon powder, wild marjoram.
That’s
all.
At
the moment to season the pasta ( I suggest “pennette” ), open
the pot, mix the condiment with pasta and add only extra-virgin
olive oil.
In
this condiment, everything.
