It
is a vigorous and nourishing dish, suitable for
lunches or dinners with several guests (about 12/15
persons) because it is convenient to prepare it in
advance.
You have to use a plum-cake container, covering it
inside with a sheet of oven paper. Now you lay down
in it a minute steak, some salt , some grated
parmesan; then a thick slice of mortadella and one
of cooked ham, then one beaten egg.
Repeat the same alternation until the edge
but the last egg will be an omelette instead of
being beaten.
Now you put it into the oven in a bain-marie for
about two hours. Let’s tip it on a plate, removing
all the liquid, letting it under a weight pressure
for about one hour.Then in the refrigerator.
When you like, let’s slice it and season with
extra-virgin olive oil and lemon
