We
have to clean half kilo of asparagus cutting away
the hard white ends and boil them for about ten
minutes in salted water. Now we strain them saving
up the water. We cut the green tops putting them
aside, the rest will be cut in small pieces.
Let’s
melt gr 50 of butter in a saucepan, add gr 40 of
sieved flour, let cook it for some seconds stirring
continuously, then pour slowly the water in which
you boiled the asparagus and continue in stirring.
We
have to add the little pieces of asparagus, let cook
for other five minutes then whirl every things with
a mixer, adding two yolks, two dl of white wine nad
blend two spoons of natural yoghurt.
Serve
it warm, adding at the last minute the juice of half
orange, a little of nutmeg and the cut tops of
asparagus.
If
the orange is a biological one. you can grate on it
its peel.
