Fish balls
Let’s
soften 500 gr of smoked herrings in one litre of
milk for 5 minutes. Then remove the milk and clean
the herrings.
Let’sbrown three minced onions in a pan in gr 50 of
butter, add gr 600 of boiled and cut
potatoes and mash all together like a purče.
Flavour with minced parsley, grated nutmeg, salt and
pepper.
Add the minced herrings and let rest in the refrigerator
for at least one hour.
Now make with the mixture some little balls, cover them
with flour, put them in beaten egg and then in
breadcrumbs.
Now fry them in extra virgin olive oil for about 3
minutes.
Serve them with raw spinaches chopped and flavoured with
extra virgin olive oil, salt, pepper and lemon juice.
