The
recipe of February
Nettle country-pizza
(for 6
persons)
By
wearing rubber gloves, pick a certain amount ( about
300 gr ) of nettle leaves and soak them for 15
minutes, so that they can loose theyr urticant
power.
Then put them in boiling salt water for two minutes.
Let them dry and become cool.
In the meantime, put in a mixer three eggs, three
glasses of milk, three glasses of flour, a glass of
extravergin olive oil ( better if the Extravergin
olive oil of The Casale La Farfalla ), salt, pepper
and a little bit of nutmeg.
Mix everything and then add a pakage of baking
powder. Go on mixing for a while.
Put a bit of extravergin olive oil ( as already said
) in a baking-tin and pour one half of the egg
mixture, then put a thin layer of nettle leaves.
Cover with the second half of the mixture and put in
the oven at high flame for twenty minutes.
Let it become cool and then cut in slices.
P.S.
Nettle can easily be replaced by any other boiler or
fried vegetable.
