Fried little pizzas
( for 10-12 persons )
We have to peel 2 – 3 medium size
potatoes and boil them in hot water. Then in the
potato master.
Put in your work-table 500 gr of
flour and in the middle the mashed potatoes, a bit
of salt and 50 gr of brewer’s yeast, already
dissolved in half glass of warm water.
Now knead
while adding some other warm water if necessary; you
have to obtain a rather stiff dough. Let it leaven
in a warm place for about 2 hours.
With the top of your fingers,
greased by olive oil, take a piece of dough, large
like a big wall-nut, flatten it by your hands and
create a little hollow in the middle.
Now fry these little pizzas in
aboundant extra virgin olive oil. Let them drip and
then fill the little hollows with little cubes of
“mozzarella”, little cubes of red tomatoes, leaves
of basil and a little piece of anchovy.
Serve immediately
